Coconut Palm Sugar
Produced from coconut palm sugar blossoms, Coconut sugar is a great tasting, mineral rich, low GI (35) cane sugar alternative. It is certified organic, minimally processed and has not been filtered. It has a rich toffee like flavour.
Coconut sugar has a high mineral content. It is a rich source of potassium, magnesium, zinc and iron. In addition to this it contains Vitamin B1, B2, B3 and B6. When compared to brown sugar, Coconut sugar has twice the iron, four times the magnesium and over 10 times the amount of zinc. Coconut sugar is unfiltered, unbleached and preservative free.

The GI of 35 puts it well into the low range and makes it an ideal sweetener for the nut slice, which needs something that solidifies to hold it all together. Unfortunately, honey or agave syrup does not do the job.
