Popular in Mediterranean and Middle Eastern cuisines, chickpeas, also known as garbanzo beans, are small, round legumes with a nutty flavor and creamy texture, used cooked, roasted, or as flour. Low in saturated fat and very low in cholesterol and sodium, they are a good source of dietary fiber, protein and copper, and a very good source of folate and manganese. They are a complete protein, providing all essential amino acids in correct proportion.
