Chick peas or garbanzo beans as they are called, are a legume. Low in Saturated Fat and very low in Cholesterol and Sodium, they are a good source of Dietary Fiber, Protein and Copper, and a very good source of Folate and Manganese. They are a complete protein, providing all essential amino acids in correct proportion.
Chickpea flour (besan) is from milled chick peas and is used in our recipes along with buckwheat flour to replace wheat flour for the gluten intolerant. Chick peas and flour from them does not produce a blood sugar spike like other highly refined carbohydrates so have a low glycemic index of 28 (from http://www.carbs-information.com/glycemic-index/chickpeas-gi-value.htm) and are great for diabetics.
