A staple in Middle Eastern and Mediterranean cuisines for centuries, tahini is a creamy paste made from ground sesame seeds, with a rich, nutty flavor, used in dips like hummus, dressings, or spreads. It’s rich in healthy fats, calcium, magnesium, and B vitamins.
It is claimed or proven that consuming tahini does the following:

Tahini is a nutritional powerhouse, being high in vitamins A, E, F and T, B1, B2, B3, B5, B6, B15, biotin, and choline. Tahini is also 20 percent complete protein - making it a richer protein source than milk, soya beans, sunflower seeds, and most nuts.
Tahini is one of the highest sources of methionine, an essential amino acid, and contains lecithin, (reduces the levels of fat in the blood) and protects against environmental toxins such as nicotine. Tahini is also high in minerals such as magnesium, potassium, iron, and phosphorus, and is an excellent (some say the best) source of calcium and is not mucus forming.
Tahini is very high in oil, over 50 percent. Most of the oil is unsaturated fat, much healthier for the body. Thini keeps very well as it contains the natural preservatives sesamin and sesamol.

The Tahini I use in my bars is organic and unhulled. Normal unhulled is more bitter but the very high quality of the product I use comes from Melissa Confectionary and is not at all bitter.
